When we hear the word "cancer," one of our first instincts is to take a hard look at what we're eating. That instinct isn't wrong, since the World Health Organization (WHO), through the International Agency for Research on Cancer (IARC), continuously classifies substances around us based on their carcinogenic potential.

To avoid falling into panic or myth, though, we need to break down these cancer-triggering foods based on credible scientific evidence. Below are food groups that have been strongly linked to increased cancer risk through clinical evidence, along with the science behind why.

Cancer-Triggering Foods Around Us

1. Processed Meat: Group 1 Carcinogen

The WHO has classified processed meat as a Group 1 carcinogen, meaning there's conclusive scientific evidence that it causes cancer in humans, particularly colorectal (large intestine) cancer.

Examples: Sausages, nuggets, smoked meat, corned beef, and ham.

Why does it cause cancer? The curing process involves nitrites and nitrates. When these substances are exposed to high heat or react with stomach acid, they convert into nitrosamines, harmful compounds that can damage the DNA of cells lining the intestine.

2. Red Meat Cooked at High Temperatures: Group 2A Carcinogen

Fresh red meat (beef, goat, lamb) falls into the Group 2A category, meaning it's probably carcinogenic to humans, especially when grilled directly over charcoal or fried until charred.

Why does it cause cancer? Fat and protein in meat exposed to direct flame form carcinogenic compounds: Heterocyclic Amines (HCAs) and Polycyclic Aromatic Hydrocarbons (PAHs), which trigger genetic mutations in the body's cells.
